Our cookery weekend is packed full of stunning food that satisfies both physically and visually. Learn how to prepare and cook creative dishes using a campfire, clay oven, dutch oven and make-do equipment.

Set over two days, the first day includes bread and vegetables, the second is game and fish.
A really wild bread baking course taking full advantage of outdoor cookery skills, using a wood fired Dutch and Cob ovens. Bread has never been so easy to make and cook the traditional way, creating truly Artisan results, learn from the best with professional wild chef – Fraser Christian. Take away culinary skills to be used at home or in the wild.
Experience a delicious journey into breadbaking
Learn the history and journey of bread making and baking, using traditional skills, cooking bread three ways over the fire, taking full advantage of all stages of the fires energy.
Make bread from scratch in our custom built clay oven and use fresh, local wild plant ingredients to make exquisite cuisine. Locally foraged wild food will be available alongside store cupboard and widely available items to create wonderful dishes you can recreate for friends and family.
Lunch is served mid day with the bread you bake in the morning, the wild fire pot soup and a selection of local artisan cheeses – with wild teas and cordials, on hand throughout the day.

Vegetables and plants
We will have foraged foods to demonstrate and cook with, gathered from wild woodland, meadows and hedgerows. The land is a mix of all the habitats needed to forage and find an abundant selection of medicinal and edible; plants, flowers and fruits, commonly found across the UK
Day 1 is totally vegan and great for anyone wishing to learn animal free meals.
Game preparation and cookery in the morning, seafood preparation and cookery in the afternoon of day 2.
This game cookery course starts with the whole animal or bird, you will learn to confidently approach a vast range of game and see the following techniques that can be applied to the preparation and butchery of all animals and birds.
The skills you experience on our game preparation and cookery course
Prepare and cook a mix of feather and fur wild animals, before cooking using wood fired ovens and smoker.
First the preparation will include plucking and skinning before cleaning and dressing the game. Then you will learn how it is cut and prepared whether it is to be cooked, salted or marinated using different spices and herb that help with preserving and correctly flavouring the range of dishes we will cook and then eat!
We provide ombinations of game: feather and fur, depending on the season and availability, and may include; duck, pigeon, partridge, pheasant, squirrel, rabbit or deer.
Seafood cookery course
Learn how to create beautiful plates of food from local seaweeds, shellfish and seafood – expertly prepared and presented using the most basic of tools.
Seafood cookery course – prepare and cook seafood at home or on a campfire. Cooking fresh fish and shellfish is easy once you know how, we will cover all the basics, including stocks, soups, cooking whole fish or shellfish, filleting and much more…
This seafood cookery course is crammed with professional step by step demonstrations on how to approach a range of fish and shellfish, you learn hands-on how to prepare different types of seafood for the pan and table. We use a sustainable range of locally caught and collected fish and shellfish that is freshly available, exact varieties of seafood will of course depend on the season and weather at the time.
